Steensma Puffs Mix 1kg
How do you prefer to fill your puffs? With whipped cream, custard, pastry cream or ice cream? For the mix from the Steensma brand, it doesn't matter what you fill the puffs with, you decide for yourself. With this mix, there is no need to cook your dough first, which is usual with puff pastry. Now all you have to do is add eggs and water and the dough is ready. Let the baking of those puffs begin!
Recipe for 12 profiteroles
250g mix for profiteroles, 5 eggs, 200ml lukewarm water.
Procedure
1. Preheat the convection oven to 200°C.
2. Line a baking tray with baking paper.
3. Put the mix for puffs, together the water and eggs in a bowl and mix until a smooth batter forms, about five minutes.
4. Using a piping bag, pipe nice dollops of the dough onto a baking tray covered with baking paper.
5. Using a plant sprayer, spray the puffs slightly wet.
6. Bake the puffs in the oven for about 25 minutes until golden brown. Be careful not to open the oven, as this will disrupt the proofing process.
7. Let the puffs cool completely before they can be filled.
