Damco mix for lemon mascarpone cake 10kg                 

With this mix from Damco, you can quickly make a delicious lemon mascarpone-flavoured cake. Turn the butter smooth (not fluffy) with a butterfly hardener. Add the rest of the raw materials and beat smooth for about 2 minutes in second gear, depending on the amount of batter and the speed of the machine.

Bake for 60 minutes (cake approx. 450 g) at an oven temperature of approx. 160°C.

Use advice:
Butter/margarine of 21 to 23°C with the butterfly to turn smoothly (not fluffy). Add the rest of the ingredients and mix for 2-4 min. in the 2nd gear smoothly, according to the amount of batter and the speed of the machine.
Advised specific gravity: 900 g/l. Oven temperature: ± 160°C. Baking time cakes of approx. 1,000 g: 75 minutes. Baking time cakes of approx. 450 g: 65 minutes.

Clean tins immediately after unloading the cake. Storage advice: store in a cool and dry place. Store (15-20°C)
