Are you looking for haircutting with just that little bit extra? Then use this Bakels haircutting mix deLuxe for muscovy pastry (15 kg). You will get the very best hairstyle in terms of volume, structure, tenderness and flavour.

Dosage:

• 1,000 grams Bakels casserole mix deLuxe for muscovite pastry (15 kg);
• 800 grams of egg;
• 100 grams water (30°C);

Procedure:

1. Mix all ingredients with a whisk for 7 - 9 minutes in third gear of the planetary mixer.
2. Then mix for a further 2 minutes in first gear.
3. Specific weight approx. 300 g/l.
4. Baking time: 25 - 30 minutes at an oven temperature of 180°C - 200°C.

What is the difference between Biscuit/Chip Mix DeLuxe and Complete?

Biscuit/Chip Mix de Luxe:

• Has a fine , woolly texture;
• Has a lighter crumb colour ( towards whitish) than the Kompleet Kapselmix;
• Has good storage, i.e. airy crust and lots of volume after baking (specific gravity  between 280-330 g/l);

Capsule Mix Complete:

• Has a slightly coarser texture than the hairstyle mix de luxe;
• The crumb colour is a bit more yellowish;
• It is a somewhat firmer hairstyle, so it carries the somewhat heavier fillings better;
• It is also slightly less airy than the DeLuxe mix ( specific gravity between 290 -360 g/l).
