Bakels Biscuit/Capsule mix (Moscovian) Complete 15 kg

Bakel kapselmix kompleet for muscovy pastry (15 kg)
With this complete mix you can make cakes with a nice and fine structure. This mix is also suitable for preparing egg cakes.

Procedure/dosage:
1,000 grams of complete mix
800 grams of egg
200 grams of water (30°C)

Stir all ingredients together for 7-10 minutes. Use a wire whisk for this.
The batter temperature is 20 - 25°C. Storage is about 300 grams per litre. Bake at 170 - 190°C. Allow for a baking time of approx. 30 minutes.

What is the difference between Biscuit/Capsule Mix Complete and DeLuxe?

Capsule Mix Complete:
-a little coarser structure than the Capsule Mix de luxe.
-more yellowish crumb colour.
-a little firmer crumb, therefore it bears somewhat heavier fillings better.
-slightly less airy crumb than hairdressing mix de luxe ( specific gravity between 290 -360 g/l)

Chipdressing mix de Luxe:
-fine , woolly structure
-lighter crumb colour ( towards whitish) than the complete
-good storage, so airy crumb and lots of volume after baking. (Specific gravity  between 280-330 g/l )
