Chocolate Cookie Mix for muscovite pastry (15 kg)
With this mix, you can make Sacher Cookie and Roll Cake in no time at all.

Procedure/dosage:
500 grams Chocolate Cookie Mix
300 grams egg
115 grams water

All ingredients briefly pre-mix and then whisk for 7-10 minutes. If necessary, knead for 1-2 minutes on low speed. Beat temperature 25 C. Store about 325 g/litre. Bake at 170 - 190 C. Baking time: ± 30 minutes.

Storage advice:store cool and dry
