Different types of French flour

What does the number after the letter ‘T’ mean?

The number following the letter ‘T’ indicates how much bran and germ the flour contains. French flour with a number lower than 65 is also referred to as French meal. Types with the number 65 or higher are classified as flour.

T45 is the lightest flour and contains the least fats. It has a low binding strength and rises the quickest. This type of flour is particularly suitable for baking cakes and patisserie. T65 is specifically intended for baking artisan bread, such as baguettes, and is therefore the most suitable for this purpose. T170 is comparable to wholemeal wheat flour, as it contains more germ and bran than other French flour types.

Label Rouge

You may sometimes find the ‘Label Rouge’ quality mark on French flour. This label indicates that the flour is of superior quality. The French Ministry of Agriculture determines whether a product may carry the ‘Label Rouge’ certification and awards it only to flours of outstanding quality.
