Robèrt Wheat Flour T55 is a fine French flour that still contains minimal traces of bran, giving it a slightly richer character than T45. This flour is made from 100% wheat, without the addition of enzymes, additives or other ingredients. This ensures a pure and reliable product of consistent quality.

T55 is a true all-round flour and is ideal for white bread, baguettes, pizza and Viennese pastries such as croissants, pain au chocolat and brioche. It is also suitable for soft rolls and focaccia. The dough remains supple and easy to work with, resulting in a light, airy finish with sufficient structure.
