What is tipo 00 flour?
Type 00 flour is a very finely milled flour from Italy. In Italian it is called farina tipo 00. Farina means flour, tipo means type and 00 refers to the finest grind, also known as the ‘extraction rate’.
Tipo 00 flour is made from wheat with a low protein content. During milling and sieving, the bran and germ are removed, leaving only the white endosperm. Because almost all particles are sifted out, this is the most refined type of flour.
What can you use type 00 flour for?
00 flour is ideal for pizza dough or bread dough with a long fermentation time. The dough becomes elastic and soft, allowing you to bake a light and crispy pizza. It can also be used for fresh pasta, such as spaghetti or lasagne.

Type 00 flour is somewhat comparable to what is known in the Netherlands as patent flour, but it is much more finely milled. In Italy, flour is classified as follows: wholemeal, type 1 flour, type 0 flour and type 00 flour, with type 00 being the most finely milled. Type 00 flour is therefore the most refined of all flour types and has a silky texture.
