About Molen De Hoop
Molen De Hoop is a tall windmill built in 1850 by H.B Meyer and acquired 2 years later by the Pijnappel family. Thus, the mill was owned by this family for many years. Since September 2014, Jan and his wife Henriëtte have transferred the now grown business Grutterij-Molen "De Hoop" Oud-Zevenaar to the current operators: Frits and Maaike Botter. Frits is the miller and keeps the administration, while Maaike runs the gruttery and arranges the purchasing of luxury and gift items. It is hard work, but fortunately for the family it feels more like a hobby. Together, they make sure the mill keeps running.

Recipe for one cake (1.5 litre capacity)
400 g Snow Cake Mix, 240 g butter or margarine and 200 g eggs (± 4 eggs).

Procedure
1. Bring all ingredients to room temperature.
2. Preheat the oven to 160°C top and bottom heat (145°C hot-air oven).
3. Put all ingredients in a bowl and mix well to form an airy mass. Do this for 3 - 4 minutes.
4. Grease a cake tin with butter and carefully pour in the batter.
5. Place the tin in the centre of a preheated oven. Bake the cake for 50 - 60 minutes until golden brown. <6. Leave the cake to cool for about 10 minutes in the cake tin and then on a wire rack.
Tip: first line the greased cake tin with almond shavings or caster sugar before pouring in the batter.
