Is glucose healthy?
Glucose is not necessarily healthy or unhealthy. As with many other products, we recommend using it in moderation. Glucose is an important source of fuel for your muscles and your brain. You need this energy source to function properly.
What is glucose syrup?
Glucose syrup is simply liquid sugar. Glucose is obtained by milling grain to release starch. This can be done using any type of starch, such as maize starch, potato starch or rice starch, although in Europe this syrup is often made from wheat starch. The starch is mixed with water and enzymes, such as amylase, which break down the long chains of starch molecules into shorter chains and eventually into glucose. The resulting mixture is heated and filtered to remove impurities and achieve the desired consistency. After further processing, glucose syrup can have different levels of sweetness and viscosity, depending on its intended use.
Why use glucose syrup instead of sugar?
In some recipes, glucose syrup is used instead of sugar because it is relatively cheaper and also less sweet. Another advantage of glucose syrup is that it does not crystallise. This keeps the treats you make with it soft and prevents them from becoming hard. For this reason, glucose syrup is used, among other things, to keep sweets, liquorice and sauces smooth and pliable.
What can you do with glucose syrup?
Glucose syrup is mainly used to prevent the formation of sugar crystals, which would otherwise make the end product hard. You can add the syrup to fondant, caramel, royal icing, mirror glaze, ganache and modelling chocolate to make the product softer. You can even use this syrup to sweeten sauces. Tip: use a damp spoon!

Why is glucose a perfect sweetener?
When making certain products, it is important to prevent sugar from crystallising, as this would make the product too hard. Regular sugar has this tendency and is therefore not suitable for making soft products such as fondant and caramel. In these cases, liquid glucose syrup is preferred. You can also use this product for hot dishes where you want to create a sweet and sour sauce, with the sweetness coming from the glucose.
