What is agar agar?

Agar agar, often simply called agar, is a plant-based gelatine derived from red seaweed (algae). It is completely plant-based and therefore suitable for vegetarians and vegans. Agar agar powder is the most commonly used form. It dissolves easily, is easy to dose and has a strong setting power.

How can you use agar agar?

Agar agar is a useful ingredient for making desserts, cakes and other baking creations. For example, you can use it to give chocolate pudding or mousse extra firmness. It is also used in sugar paste to help decorations withstand heat better.

Making a fruit jelly or a cake filling? Agar agar provides a smooth, firm texture without affecting the flavour. It is also an excellent plant-based alternative to gelatine in recipes such as custard, panna cotta or bavarois. Combined with coconut milk or other dairy alternatives, it allows you to easily create vegan desserts such as coconut pudding or cheesecake.

How do you use agar agar?

Agar agar needs to be activated first. Dissolve it in a liquid and bring this to the boil. The setting power only develops after boiling. Then allow the mixture to cool so it can set. This process differs from gelatine, so always follow the instructions in your recipe carefully.

Different types and quantities
