What is tylose powder?
Tylose powder is a white powder derived from cellulose. Cellulose is a natural polymer found in the cell walls of plants. It is produced through a chemical process in which carboxymethyl groups are added to the cellulose molecules.
The addition of carboxymethyl groups changes the properties of cellulose, resulting in a product with unique characteristics: tylose. Tylose powder is known for its versatility and is often used as a thickening agent, stabiliser and binding agent in both the food and non-food industries.
Gluten-free auxiliary ingredient
A major advantage of tylose powder is that it is gluten-free. This means you can also use this auxiliary ingredient when making gluten-free treats. The powder is therefore suitable for people with a gluten intolerance or coeliac disease.
What can you do with tylose powder?
Tylose powder can be used for several applications. Below are the uses for which this powder is most commonly applied in the baking world.
Making fondant and marzipan figures
With tylose powder, you can make materials such as fondant or marzipan more workable, making them easier to shape. In addition, tylose powder helps figures made from fondant or marzipan to retain their shape. This is because the powder allows the fondant or marzipan to firm up slightly as it is absorbed. Knead approximately 3 grams into 250 grams of fondant or marzipan, wrap it well and allow it to rest overnight.
Create the most beautiful figures
The next day, you can create beautiful figures with the fondant or marzipan that will hold their shape. Only after leaving the figures to rest for some time will the fondant become harder. This means you can still work comfortably with the fondant or marzipan after allowing the tylose to absorb overnight. You can then use these firm figures to decorate cakes, sponges and cupcakes. Fondant treated with tylose powder is also known as modelling paste.
Making edible glue
In addition to strengthening fondant and marzipan, tylose powder is also used to make edible glue. This glue can be used to attach fondant figures or marzipan decorations to cakes, sponges and biscuits. You make edible glue by mixing one part tylose with 30 parts water. Leave this mixture to stand overnight. It will then turn into an easy-to-use edible glue for decorating all your bakes. The edible glue keeps for approximately one week when stored in the refrigerator.
