The grain is grown by farmer Jan Steverink in Silvoldse Slaege, Achterhoek, on fertile, alluvial soil that has been naturally enriched by centuries of flooding. Since 2005, Jan has cultivated ancient grain varieties ideal for bread, pastries and even beer. This flour forms the perfect base for baking pure, old-fashioned bread, with no artificial additives.

Molen de Hoop, a tall windmill constructed in 1850 by H.B. Meyer and later operated by the Pijnappel family, has ground grain for generations. In September 2014, Jan and his wife Henriëtte passed the reins of the thriving business, Grutterij-Molen “Molen de Hoop” in Oud-Zevenaar, to the current managers, Frits and Maaike Botter. Frits manages the millstones and accounting, while Maaike oversees day-to-day operations and curates a range of premium baking supplies and gifts. Though demanding, the work feels more like a labor of love for the family, and together they keep the mill’s wheels turning.

Today the mill supplies premium flour, meal, bread mixes and cake mixes—all favored by hobby and professional bakers who shop at Baktotaal.
