Damco almond paste 10 kg
Damco almond paste is delicious in almond rolls, filled cakes, canoes, apple pastries, almond biscuits or pastry letters. Also, mix a little grated lemon peel through your almond paste for a nice fresh flavour.
If you want to use the almond paste as filling for stuffed cakes, butter biscuits, rondos or on the bottom of your apple pie, it is convenient to mix the paste with water and egg.
Please note: this item comes with a relatively short shelf life. This is due to the freshness of the product.
Use advice:
Almond bars, letters and speculoos bars: Almond paste + 5-7% egg + possibly lemon zest.
Filled speculoos: Almond paste + 5-7% egg + approx. 8% water + possibly lemon zest.
For filling work: Almond paste + 5-7% egg + 5-10% water + possibly lemon zest.

Always use clean equipment and use fresh eggs or pasteurised eggs. Make the paste at least 3 days in advance.
Storage advice: store in a dry place (18-22°C). Close opened boxes tightly and store the pastry in a cool place.
