    Brand New Cake Almond paste 500 grams
    Almond rolls, filled cakes, canoes, apple pastries, almond cakes or pastry letters, you all need almond paste for these delicious treats. You can make your own almond paste, but with almond paste from Brand New Cake, your almond paste is almost ready. To complete your almond paste, all you need to do is add some egg and/or water.

    Variation tip: Mix some grated lemon rind into your almond paste for a nice fresh flavour.

    Pastry bar recipe
    While Christmas is celebrated exuberantly all over the world, we Dutch remain loyal to Sinterklaas. And when you consider all the delicacies that go with the 'delicious evening', you can understand why. The almond bar is one such treat. Freshly made and warm from the oven? Nobody turns that down!

    Below you ll find a super easy recipe so that you can serve something tasty even during the lovely evening. You can also use the Brand New Cake Almond Paste to make delicious filled cakes. Want to know how to do this? Then take a look at our recipes blog

    Requirements for a pastry bar

    • Brand Ne wCake Almond paste 500 grams;
    • 1 egg;
    • 1 teaspoon lemon zest;
    • Roombutter puff pastry (preferably a large 1-piece slice. If you don't have this, you can also lay several sheets of puff pastry with the edges together and gently roll out).


    How to prepare
    1. Preheat the oven to 200 degrees celsius.
    2. In a bowl, mix the Bouwhuis almond paste with half a beaten egg. Do not throw away the other half of the egg, you can brush the almond stick with this before it goes into the oven.
    3. Add the lemon zest to taste. If you don't like this, you can also leave it out.
    4. Roll out your buttercream puff pastry on a surface you can also easily take it off, such as a cutting board or placemat.
    5. Spread your almond paste mixture like a long 'sausage' over the longest part of your butter puff pastry. Note; to roll it well, it is important that your mixture is about 5 cm from the side.
    6. Carefully roll the 5 cm strip of puff pastry over your almond paste mixture and roll all the way through. Grease the last piece of puff pastry im with a little egg, so that the seam is neatly sealed.
    7. Place your almond stick with the seam under on your baking tray with baking paper and brush it with the remaining leftover beaten egg.
    8. Place the baking tray with almond stick in the oven for 25 minutes. Is the puff pastry nicely golden brown? Then your almond bar is ready!

    Serving tip: preferably serve warm. Have you made the bar before and still want to serve it warm? Then put your almond stick in a preheated oven for a few minutes. This way your puff pastry will also get nice and crispy again!

    Below are several uses for almond paste.

    • To 500 grams of almond paste use half an egg and 50ml of water.
    • To make almond rolls or pastry letters, mix half an egg to 500 grams of almond paste.


    Storage advice: vFor both variants, store the almond paste tightly sealed in the refrigerator. Unprocessed, the almond paste should be kept dark and at room temperature (15-20°C).
