    Damco Almond paste 1 kg
    Almond paste, delicious to use in almond rolls, filled cakes, can’s, apple pastries, almond biscuits or pastry letters. Mix some grated lemon rind through your almond paste for a nice fresh flavour.
    If you want to use the almond paste as a filling for filled cakes, butter biscuits, rondo’s or on the bottom of your apple pie, it is handy to know to mix it with water and egg.

    While all over the world people are celebrating Christmas, we Dutch remain loyal to Saint Nicholas. And when you consider all the treats that go with the 'delicious evening', you can understand why. The almond bar is one such treat. Freshly made and warm from the oven? Nobody turns that down!
    Below you ll find a super easy recipe so that you can serve something tasty even during the lovely evening.

    Recipe:
    What do you need for a pastry rod?

    - 500 grams of almond paste
    - 1 egg
    - 1 teaspoon lemon zest
    - Buttercream puff pastry (preferably a large slice in one piece. If you don't have this, you can also lay several sheets of puff pastry with the edges together and gently roll out).

    - Method:
    - Preheat the oven to 200 degrees.
    - In a bowl, mix the Bouwhuis almond paste with half a beaten egg. Don't throw away the other half of the egg, you can brush the almond stick with this later before it goes into the oven.
    - Add the lemon rind to taste. If you don't like it, you can also leave it out.
    - Roll out your buttercream puff pastry on a surface you can also easily pick it up from, such as a cutting board or placemat.
    - Spread your almond paste mixture like a long 'sausage' over the longest part of your buttercream puff pastry. Note; to roll it properly, it is important that your mixture is about 5cm from the side.
    - Carefully roll the 5cm strip of puff pastry over your almond paste mixture and roll all the way through. Grease the last piece of puff pastry im with a little egg so that the seam is neatly sealed.
    - Place your almond stick with the seam under on your baking tray with baking paper and brush it with the remaining leftover beaten egg.
    - Place the tray with almond stick in the oven for 25 minutes. Is the puff pastry nicely golden brown? Then your almond stick is ready!

    Tips:
    Please serve warm. Have you made the bar before and still want to serve it warm? Then put your almond bar in a preheated oven for a few minutes. This way your puff pastry will also get nice and crispy again!

    For 500 grams of almond paste, use half an egg and 50ml of water.
    For making almond rolls or pastry letters, mix half an egg to 500 grams of almond paste.

    For both variants, the almond paste should be kept well sealed in the fridge. Unprocessed, the almond paste can be kept dark and at room temperature.
