Brand New Cake Raisin/Currant buns mix 500g
Mmm... currant buns! Who isn't crazy about them? Delicious with butter or in the savoury version with a slice of farm cheese. Here is a delicious recipe for fresh currant buns.
Recipe
500g raisin/currant bun mix, 250ml water, 42g fresh yeast or 14g dry yeast, max 6g salt, approx. 450g soaked sultanas and/or currants.

Procedure by hand
1. If using fresh yeast, first dissolve it in a little lukewarm water.
2. Mix the ingredients, except the fruit, into a dough and knead for 10 minutes. At the end, knead in the fruit until it is well distributed in the dough.
3. Allow the dough to rise, covered, in a warm place for 40 minutes.
4. Knead the dough well and weigh out equal portions of dough and make balls from it. Flatten slightly at the top and leave to rise for another 45 minutes.
5. Place the balls on a baking tray that has been greased or covered with baking paper.
6. Preheat the oven to 250°C (hot air approx 225°C).
7. Bake the balls for about 8 minutes, until a nice crust has formed. Immediately after baking, brush with butter and then allow to cool well.
