    With the RUF Landlust apple cake baking mix, you can bake a traditional spelt apple cake with a special character. Juicy, sunken apple pieces meet an aromatic base made from fine spelt flour and almond semolina, which gives the cake a pleasant nutty note. The composition is rounded off by a delicate apricot sauce, which provides a fruity addition and gives this classic cake a harmonious flavour. The carefully balanced recipe combines tried-and-tested ingredients with a modern interpretation of the popular apple cake.

    Whether for coffee and cake, family celebrations or cosy moments of indulgence, this apple cake impresses with its moist texture and balanced flavour. Dusted with icing sugar or glazed, it creates a rustic cake with an appealing appearance in no time at all. A baking mix that makes classic apple cake enjoyment easy to achieve and ensures special moments of indulgence.

    Preparation

    1. Prepare the crumble base: Preheat the oven to 175 °C top/bottom heat or 160 °C fan oven. Knead the baking mix for crumble dough with soft butter or margarine to form crumbs. Place in a springform pan (Ø 26 cm) lined with baking paper and press down lightly. Peel and core 2 apples, cut into slices and spread over the base.
    2. Prepare the batter: mix the baking mix for batter, soft butter or margarine, eggs and milk and beat for approx. 3 minutes until creamy. Spread the batter over the crumble base.
    3. Baking: Peel and quarter the remaining apples, score them and place them on top of the batter. Bake in the lower third of the oven for approx. 50 minutes. Then remove from the tin and leave to cool.
    4. Apply apricot sauce: Mix the powder for the apricot sauce with water and spread over the cake with a brush. Dust with icing sugar as desired.
