With the Martellato Couverture melting container 6 litres, is very suitable for couverture and chocolate. This melting container is made of impact-resistant plastic with stainless steel removable melting container and lid. Moreover, the melting tank is fitted with adjustable thermostat. The capacity of the melting tank is 6 litres.
Important hint:
A melting pan is mainly intended to keep chocolate at the right temperature (temporarily) during or before processing.
Melting chocolate in a melting pan can be done, but, depending on the quantity to be melted, it usually takes several hours.
If you want to melt chocolate quickly, it is much quicker to do so in the microwave for small quantities and au bain marie (not too hot!) where the chocolate is kept in constant motion.
If you want to work with chocolate and still melt it in the melting tank, set the melting tank, for example, at 45°C the night before and the chocolate will be ready to temper the next morning.
