Ingredients:
10.000 g                       patent flour
600 g                              yeast
150 g                              salt
1.500 g                            Damco small bread
5,200 - 5.800 g              water

Procedure:
Cut:                        approx. 1,6000 kneading strokes
Weighing temperature:                                        1.560 g (30 pieces)
Rolling:                         20 minutes

Divide and ball up: 

Stirring:                      with egg (if desired)
Narice:                              70 - 80 minutes
Oven temperature:        250 - 260°C
Baking time:                    8 - 9 minutes

Storage advice: keep cool and dry (15-20°C)
Container: bag à 15 kg
