Brand New Cake Isomalt Granules 750 g
Isomalt (E953), also known as spinning sugar, is an extensible sweetener. Extensive sweeteners are slightly less or as sweet as sugar. Isomalt has 50% sweetening power of granulated sugar and is suitable for sugar pouring, pulling, blowing and for decoration. Because Isomalt can withstand high temperatures, it is ideally suited to melting and then remoulding.
How to use
Heat in a suitable container in the microwave or a pan to 180° C until it melts. You can now work it into silicone moulds or mould it further.
Colouring Brand New Cake Isomalt
This is best done with these colour powders from BrandNewCake. You prepare these with small amount of water, at 130°C add the colouring. Then boil the isomalt further until 170°C. At that temperature, you have the right percentage of moisture in the isomalt for a workpiece that doesn't get sticky.
