What is a dough cutter?

A dough cutter, also known as a pastry wheel, is used for cutting or dividing different types of dough. You can use it to make straight or fluted lines. Think of cutting biscuit dough, creating a lattice pattern on a tart, or dividing puff pastry into equal pieces.

Different types of dough cutters

There are different types of dough cutters, from simple wheels to models with fluted edges for a decorative effect.

Dough cutter

This is the best-known model: a handle with a wheel attached. It’s ideal for cutting pastry dough, biscuit dough, or creating a lattice on a tart. Some versions have a fluted edge for a decorative finish.

Pasta cutter

You use this dough cutter to cut fresh pasta, such as tagliatelle or fettuccine, into strips. This is also known as a pasta wheel. A pasta cutter is often slightly wider and designed to make long, straight lines in pasta dough.

Ravioli cutter

A ravioli cutter is specifically designed to neatly separate filled pasta, such as ravioli. This is also known as a ravioli roller. It is often a wheel or cutter with a fluted edge, which both cuts and presses the edges. This helps keep the filling securely inside the dough.

Pizza cutter

With a pizza cutter, you can cut both the dough and the baked pizza into portions. Most pizza cutters have a round cutting wheel that rolls smoothly over the dough or the pizza. So you don’t only use a pizza cutter after baking, but also during preparation.

The material of a dough cutter

Many dough cutters are made of stainless steel. This material is strong, durable and easy to clean. The handle can also be stainless steel, but there are also versions with a wooden or plastic handle, which offers extra grip and comfort while cutting.

Combining a dough cutter with other products

A dough cutter works best together with other handy baking tools. For example, first roll the dough out evenly with a rolling pin before you start cutting. That way you’ll get nice, straight lines. Baking a sponge cake? Then use a cake saw to slice the cake neatly in half so you can fill it.
