    Full wheat emmer wheat flour from Molen de Hoop is a flour from an ancient grain with a deliciously specific, special flavour. It can be challenging for bakers to bake with, but if the right processing is found it can result in delicious breads and other pastries. It is trickier to bake with, as it contains less gluten than normal wheat (similar to spelt).

    The flour is grown by a farmer with a passion for ancient crops. Emmertar wheat flour is tasty and also healthy, as it contains more fibre than "normal" wheat. Apart from the high amount of fibre, this flour also contains a lot of vitamins B and E. The flavour of the bread or pastry can give off a slightly sweet, caramel-like flavour, which is nutty and nice and tangy.

    In the Silvoldse Slaege, located in the Achterhoek region, lie the fields of grain grower Jan Steverink. The area has been flooded from flooding in the past, resulting in fertile arable land with heavy primal banks. Since 2005, Jan has been growing various ancient grain varieties, suitable for baking bread, pastries or brewing beer. The Slaege provides an ideal basis for baking pure bread "just as vrogger". The best flour, as a pure ingredient, without artifice.  

    What to prepare with emmer wheat
    You can use the flour to make bread and various types of pastries. The dough needs to be kneaded for less time, as it is slightly slacker than "normal" dough. It is recommended to let the dough rise slowly, in cold temperatures. If you combine bucket flour with sourdough, the end result will be a bit fluffier. If you want to add more flavour to your bread or other pastries, bucket wheat (flour) is definitely recommended.

    About Molen de Hoop
    Molen De Hoop is a high windmill built in 1850 by H.B Meyer and acquired 2 years later by the Pijnappel family. Thus, the mill has been owned by this family for many years.  Since September 2014, Jan and his wife Henriëtte have transferred the now grown business Grutterij-Molen "De Hoop" Oud-Zevenaar to the current operators: Frits and Maaike Botter. Frits is the miller and keeps the administration, while Maaike runs the gruttery and arranges the purchasing of luxury and gift items. It is hard work, but fortunately for the family it feels more like a hobby. Together, they make sure the mill keeps running.

    Molen de Hoop supplies raw materials such as flour and flour as well as bread mixes and cake mixes of high quality. It is therefore not surprising that these products are very popular among hobby and home bakers who order from Baktotaal.
