    RUF Fruit Cake Mix 260 g

    RUF Fruit Cake Dough is the ideal base for classic fruit cakes with a light, moist base. The carefully balanced baking mix ensures a fine crumb and a stable structure that reliably supports a wide variety of fruit toppings. After baking, the base has a golden brown surface and a balanced flavour that harmonises perfectly with fresh fruit. The foolproof recipe ensures consistent results and offers a wide range of uses.

    Whether topped with strawberries, mandarins, cherries or seasonal fruit, this fruit cake base can be customised to suit your taste. Combined with cake glaze, cream or a light cream, you can create a fresh fruit cake for coffee or special occasions in no time at all. The base is ideal for fruit cake tins and provides a reliable foundation for creative fruit creations.

    Preparation

    Preparation temperature

    • Top and bottom heat: approx. 180 °C
    • Fan oven: approx. 160 °C
    • Baking time: approx. 25 minutes

    We recommend baking the fruit base using top/bottom heat.

    1. Prepare the dough: Place the basic mixture, eggs and butter or margarine in a mixing bowl. First mix briefly on the lowest setting, then mix on the highest setting for approx. 1 minute until creamy.
    2. Baking: Fill a greased and floured fruit cake tin (Ø 28 cm) or springform tin (Ø 26 cm) with the dough and smooth the surface. Bake in the lower third of the preheated oven and test with a skewer.
    3. Cooling and topping: Immediately after baking, turn the base out onto a wire rack lined with baking paper and leave to cool. Top with fruit as desired and cover with cake glaze.
