What are vanilla pods?

Vanilla pods are the fruits of the climbing orchid Vanilla planifolia. After harvesting, the pods are fermented, allowing their characteristic flavour to develop. The most aromatic part is the flavourful seeds inside the pod. These can easily be scraped out and added to your recipes.

How do you use vanilla pods?

Vanilla pods add a delicious, natural vanilla flavour to both hot and cold preparations. Simply scrape the seeds from the pod and add them to your dish.

Different types of vanilla pods

Tahitian vanilla pods

Tahitian vanilla has a very sweet aroma and a rich flavour. In addition to the classic vanilla taste, you may also notice hints of plum, liquorice, anise and a touch of chocolate.

Combining vanilla pods with other baking products

Vanilla pods pair well with many other ingredients. Use them together with chocolate for bonbons or ganache, or combine them with nuts and seeds in homemade granola or biscuits. The flavour of vanilla really shines in cream, milk or whipping cream, making it perfect for ice cream, bavarois or creamy fillings. You can also add vanilla to fruit tarts or compotes for a soft, sweet flavour.

What can you do with an empty vanilla pod?

• Do not throw away a used vanilla pod. Even an empty pod still contains plenty of flavour.
• Make vanilla sugar: place the empty pod in a jar of granulated sugar and leave it to infuse for several days.

Make vanilla extract: put the pods in a small bottle with vodka or rum and leave to infuse for a few weeks.

Infuse warm dishes: simmer the pod in milk, cream or compote and remove it before serving.
•
Use in tea or coffee: let the pod steep or simmer briefly for a subtle vanilla flavour.
