Patis Decor Kappa Carrageenan 10g
Patis Decor Kappa Carrageenan 10g is a plant-based gelling agent, extracted from red seaweed, which produces a firm gel that cuts cleanly. This fine powder is colourless, odourless and tasteless. It is an ideal alternative to gelatine and is suitable for vegetarian and vegan applications. Carrageenan is up to 8 times more potent than gelatine, meaning you only need a small amount.
This gelling agent is suitable for fruits that are difficult to set with gelatine, such as pineapple, kiwi and papaya. This product is also suitable for milk-based desserts, such as panna cotta or creamy custards. It also helps to bind milk proteins and stabilise various desserts. When combined with other binding agents, such as locust bean gum, you can further refine the texture and create a more cohesive whole.
How do you use Patis Decor Kappa Carrageenan 10g? First
mix the kappa carrageenan with dry ingredients and then add it to a hot liquid, stirring well. It dissolves completely at temperatures above 70 °C and begins to set as soon as it cools (from around 40 °C).
