Irca Bavarois/Mousse Mix White Chocolate (Lilly) 1kg
Lilly bavarois/mousse mix from the Italian brand Irca. It is a powdered white chocolate mix specially designed for cold-making mousses, bavarois and chilled desserts. It can also be used to make fresh liquid cream stable and firmer when whipped. Quick and easy to use in cold process, it is an excellent substitute for gelatine sheets. The product is freeze-stable and has pure/clear cut results.
Recipe: Mix 200 grams of Lilly powder to 300 grams of water/milk and 1 litre of cream. Pour the mixture into moulds and chill for at least 2 hours in the fridge or 40 min in the freezer.
