German Rye Flour Type 997 750g is a medium-coarse rye flour with a full, distinct rye flavour and a light brown colour. This flour contains more parts of the grain than Type 815 and gives your baked goods more flavour and a firmer texture.

Suitable for baking rye bread, (sourdough) bread and mixed bread. Think of classic rye bread, floor bread or firm loaves with a rich flavour. For a lighter result, this rye flour is often combined with wheat flour, such as Type 550, so that the dough rises better and becomes less dense.

Type 997 lies between light and dark rye flour and is a good choice if you want to bake a more robust rye bread with more flavour and a firm texture, without the result becoming too heavy.
