Microwave method:
1. Place the desired amount of Callets®/drops in a microwave-safe plastic or glass bowl.
2. Melt on high (about 800 W), stirring thoroughly every 15 seconds to ensure even heat distribution. Stop heating when only a few small pieces remain, then keep stirring until the chocolate is completely smooth.
3. The chocolate is now ready to use.
Au bain-marie method
This gentle method helps prevent scorching.
1. Fill a saucepan with a few centimetres of water and bring it to a simmer. Set a heatproof bowl over the pan, making sure the bottom of the bowl does not touch the water; the rising steam will gently warm the chocolate.
2. Bring the water to a simmer and maintain a gentle, steady heat.
3. Add the desired amount of Callets or drops to the bowl and stir until the chocolate is fully melted, then scrape down the sides to incorporate any residual chocolate.
