Full wheat flour GLX is a high-quality whole wheat flour with strong proteins, excellent carrying capacity and smooth dry dough processing. The flour has a high water absorption and gives excellent tenderness and high volume. Full wheat flour GLX is mainly used for the preparation of luxury whole wheat bread.
For delicious wholemeal bread you need:
Wheat flour GLX 3%
Yeast 1.5%
Water approx. 67%
Mode of operation:
- Knead the ingredients into a nice smooth dough.
- Doughing temperature 27°C
- Weigh and roll
- Rolling time approx. 40 minutes.
- Make up and decorate if necessary.
- Rise approx. 60 minutes.
- Baking as a large loaf.
