Tarrow Flour Fine (10 kg) This fine wheat flour is a composite blend of semolina with very fine bran. This type of flour is mainly used for preparing wheat bread with fine bran.
Fine wheat flour has a good firm base, smooth dry dough processing and good carrying capacity. It gives a light, fine crumb colour as well as nice volume and good tenderness.
Procedure: Knead the raw materials into a supple dough (dough temperature 27C). Then weigh out and roll up. Rough for approx. 45min. Then top and decorate if necessary. Proofing for approx. 60 min. Bake as a large loaf.
