For this you will need:
Tarwheat flour Coarse 100%
Brown bread powder 3%
Gist 1.5%
Water approx. 62%
Work method:
- Knead the ingredients into a nice supple dough.
- Dough temperature 27°C
- Weigh out and roll up
- Bulb rise approx. 45 minutes.
- Form up and decorate if necessary.
- Proofing approx. 60 minutes.
- Bake as a large loaf.
