Spelt flour T630 (10 kg)
Spelt flour (type 630) by Holland Meel for preparing spelt bread, but also for incorporation in other bread and pastry products.
Recipe Spelt Bread:
Spelt flour 100%
White bread powder 2%
Crown bread powder 1%
Salt 1.5%
Gist 2.5%
Water 53%
Procedure:
-Mix raw materials and knead briefly for max. 3 min.
- Dough temperature 27ºC.
-Weigh and roll up
-Bake for 45 min.
-Pastry for approx. 70 min.
-Snip diagonally several times.
-Bake as large loaf with a little steam.
