The emulsifier Natur Emul is particularly suitable for replacing eggs in vegetable recipes, for example in the preparation of vegan mayonnaise. The product is made from citrus fibre and works in both cold and hot liquid.
Applications: as an emulsifier in cold and hot emulsions, e.g. for the production of mayonnaise, creams and ganache. Suitable for vegetable or egg-free recipes as a substitute for an egg. Resistant to freezing.
