Sosa Inulin Hot 500 g This heat-stable inulin from Sosa is a soluble fibre with prebiotic properties, sourced from fructose. It forms a stable gel that binds large amounts of water and can also absorb fats or other liquids to create a satisfying crunch. To activate the inulin, dissolve it in a liquid at 70°C, then let the mixture stand for 2 hours at 5°C so it fully hydrates. Once chilled, the mixture can be frozen. Use it in mousses, ice creams and fat-free creams.
