This clear, odourless liquid adds flexibility and moisture to icing and fondant. A small amount softens hardened or dried-out fondant, restoring its suppleness, and it is also a key ingredient for homemade rolled fondant.

Ingredients: emulsifier (glycerine E422).

Typical usage: 2–3 g/kg.
For antifreeze applications, use 5–10 g/kg.
