Preparation: 1. Dip the textured soybeans into the cold vegetable broth and leave to hydrate for 15 minutes. 2. While the soya is hydrating, peel the carrot and courgette and dice them into small pieces with the red pepper. Cook them for 1 minute in boiling salted water and let them cool quickly in cold water. 3. Drain the vegetables, the textured soya and reserve the vegetable stock. Mix the textured soya beans with the vegetables and add the diced tofu. 4. Add the Gelburger little by little, while stirring, so that everything mixes well. Add the vegetable stock little by little so that it hydrates, until you have a well mixed dough. 5. Place the burger dough in round rings and if you like big burgers you can make 2. Or 4 small ones. 6. Press the burgers lightly and let them stand cold for 1 hour so that the Gel burger makes its binding effect. 7. Then you can fry them on the griddle or on the grill. 8. You can accompany the burgers with a salad with fresh vegetables sliced very thinly, seasoned with olive oil or with whatever garnishes you like!
