Sosa Beef Gelatine 750g
Gelatine leaves obtained from cattle, to be used as a binder for many different delicacies such as sweets, desserts, fruit juices and confectionery. A feature of this gelatine is that it is thermo reversible, i.e. the gelatine needs to be activated by heat. The gelatine can be frozen.
Preparation: Heat the medium to be bound to 45°C and weigh the gelatine according to the dosage. Take a small portion of the medium to be bound aside and add the gelatine to it. Mix this into a soft and flexible gel. Add the mixture to the whole of the agent to be bound and keep stirring.
