Preparable mirror glaze for coating a cake, mouse, bavaroises or pie.
Procedure: pour the mirror glaze into a bowl and heat it in the microwave or in a water bath (bain marie) to 35-40°C. Meanwhile, keep stirring until you get a smooth even substance. When the mirror glaze is completely liquid and then pour it over the respective product and let the mirror glaze harden.
Ingredients: glucose syrup, sucrose, water, modified starch, thickener: agar agar (E406) & pectin (E440), acidity regulator: citric acid (E330) & sodium citrate (E331), preservatives: potassium sorbate (E202).
