RUF Potato Flour 500 g
RUF Potato Flour is a tried and tested, gluten-free ingredient for cooking and baking. It is not flour in the traditional sense, but pure, natural starch from selected potatoes – also known as potato starch. As a flavourless and colourless binding agent, it is ideal for thickening soups, sauces and creams. Compared to conventional cornflour, potato starch has a slightly stronger binding power and absorbs excess liquid particularly well.
When baking, potato flour ensures a light, airy dough structure and enhances the moistness of fruit or quark cakes. It also contributes to a fine crumb in sponge cakes. Potato starch is an integral part of gluten-free recipes and can be integrated into flour mixtures in many ways. To thicken, potato flour is always mixed into cold liquid and then added to the hot dish, where it boils briefly and develops its full binding power.
