    Ingredients

    Baking mix ingredients: WHEAT FLOUR, rice flour, lievito madre (dried sourdough made from WHEAT FLOUR), WHOLE GRAIN SPELT FLOUR (a type of WHEAT), sea salt. Seasoning mix ingredients: Onions, maltodextrin, table salt, herbs (parsley, chives), spices, sugar, sunflower oil. Dry baker's yeast ingredients: Yeast, emulsifier sorbitan monostearate.

    RUF Our Pinsa Baking Mix is a modern interpretation of the Italian classic with its characteristic airy texture and crispy crust. The carefully balanced flour mixture forms the ideal basis for an aromatic dough with a light texture and pleasant bite. The result is a pinsa with a rustic appearance and authentic taste that can be enjoyed in many ways and impresses with its special texture.

    Whether classic with tomato sauce and mozzarella, Mediterranean with antipasti or creative with fresh herbs and sophisticated toppings – the pinsa can be customised to suit your taste. Sweet variations with fruity or creamy components also offer a variety of delicious ideas. Ideal for social evenings, buffets or as a special alternative to traditional pizza, this baking mix provides a versatile basis for creative oven-baked dishes.

    Preparation

    Preparation temperature

    • Top and bottom heat: approx. 240 °C
    • Fan oven: approx. 220 °C
    • Pre-baking time: approx. 10 minutes
    • Baking time: approx. 8–10 minutes
    1. Prepare the dough: Mix the basic mixture and yeast. Add lukewarm water and oil and knead with the dough hook, first briefly on a low setting, then for 5 minutes on a higher setting. Cover the dough and leave to rise in a warm place for approx. 30 minutes.
    2. Shape the pins: Halve the dough, shape into two balls and leave to rest for another 45 minutes. On a floured surface, press into an oval shape with your fingertips and place on an oiled baking tray. Pre-bake for approx. 10 minutes.
    3. Top and bake: Top the pre-baked pins as desired and bake for 8–10 minutes using the grill function or at 240 °C top/bottom heat. Baking time may vary depending on the topping.
