What exactly is vanilla?
Vanilla comes from the pods of the Vanilla genus of orchids, originally from Mexico and Guatemala. The most common species used in baking is Vanilla planifolia. While still unripe, these pods are called vanilla beans; they are briefly immersed in hot water. After this bath, the pods are sun-dried for several weeks until they become dark and pliable. Inside each pod are thousands of tiny black seeds, often called the vanilla caviar or pulp. Vanilla is a remarkably complex and subtle spice, containing more than 250 individual flavour and aroma compounds.
The difference between flavouring and extract
Extract is made from real vanilla pods, while an aroma relies on synthetic vanillin.
