Tips for working with fondant

It's important when using fondant that it doesn't stick to the surface. Before you start rolling out the fondant, sprinkle some powdered sugar or cornstarch on your work surface. Knead your rolled fondant well to make it soft and pliable. Shortening can also be used to prevent sticking. Be careful with powdered sugar as it makes the fondant drier, which increases the chance of tearing. Make a ball of your fondant, press it slightly flat, and start rolling. It's important to roll out the fondant evenly everywhere. A slightly thicker layer is easy for decorating your pie, but a layer that's too thick doesn't taste good. To place the fondant properly on your pie, lay it half over your rolling pin and lift it above the pie. Then drape it over the pie and use your hands and a smoother to get the fondant tightly around the pie. The beginning is often a bit tricky, but practice makes perfect. After trying a few times, you'll notice that it becomes easier. Always store fondant airtight, as exposure to air will make it hard, which is a waste.
