Roll out the dough you are going to use to the right thickness and then dust it very lightly with a little flour.
Place the flan punch upside down on the work surface and dust it lightly with some flour. Lay the rolled-out dough on the flan punch and roll over it with a rolling pin, you will now see the grid appear.
Take the excess dough away from the edge and "dribble" or tap gently with the punch on the work surface so that the shapes of the grid fall out.
Pick up the grid from the flan punch using the two protruding handles on the sides. Lift the grid and turn it onto the cake or flan. When your lattice dough is on your baking, you can press it down or cut it off if necessary, so that it fits nicely on the cake or flan.
Do you want the cake to shine? Then you can brush the pastry with an egg yolk or (grein)sugar beforehand, or smear it with covering jelly after baking.
