    Damco cold binder to bind fruit/moisture 20kg 
    Damco cold binder is used to improve the carrying capacity of a product. For example in cakes or as a binder of a wet filling, for example apple filling or fruit juice.

    Recipe
    50 - 100 g cold binder per litre of fruit juice
    25 - 30 g cold binder per kilo of (cake) mix

    Procedure
    Binding fruit: Mix Damco Cold Binder with sugar and add it to the juice while stirring
    Ant sagging of fruits in cake/capsule: mix Damco Cold Binder with powder. Then follow the recipe as usual.

    Storage advice: keep cool, dark and dry (15-20°C)
