Damco Multi Bavaroise 2.5 kg Delicious bavarois mix packed per 2.5 kg in a bucket.
Standard Recipe: - 45g bavarois mix -100ml water (approx. 30C) -550g (lightly) whipped cream (lightly sweetened, 55gr sugar)
1) Whip the cream and sugar until lumpy. 2) Dissolve the mix in the water while stirring (smooth) 3) quickly spoon the mix through the whipped cream (if it remains standing you will get lumps) 4) process the bavarois immediately and leave it to set in the fridge for approx. 1 hour.
Recipe with Yoghurt: -55g bavarois mix -100ml water (approx. 30C) -325g (lightly) whipped cream (lightly sweetened, 35gr sugar) -175g Yoghurt
1) Whip the cream and sugar until lumpy. 2) While stirring, dissolve the mix in the water and, while stirring, add the yoghurt to this (smooth) 3) quickly scoop the mix through the whipped cream (if it stays, you will get lumps) 4) process the bavarois immediately and leave it to set in the fridge for approx. 1 hour.
TIP: To prepare fruit bavarois; substitute 100ml water for 125/150g fruit puree or juice.
