The Damco almond broyage 50% sugar/ 50% almond flour 6 kg consists of 50% sugar and 50% almond flour.
You can use the almond broyage to prepare progres, frangipane and miserable.
Please note: this item comes with a relatively short shelf life. This is due to the freshness of the product.
Use advice:
Smooth butter, add broyage ± 1 min, slowly add eggs and stir in flour and salt. Pour 250 g of batter into a dish (18 cm) frosted with crust (thickness 1.25 mm).
Baking temperature : ± 180° C (slide open). Baking time : ± 35 minutes.
Recipe for frangipane:
2,000 g broyage 50/50
1,000 g butter/margarine
900 g egg
300 g flour
lemon rind
Turn the butter and lemon rind smoothly with the butterfly. Alternately add the broyage 50/ 50 and eggs.
Add the flour last. Turn the frangipane not fluffy.
The frangipane is now ready for further processing.
Storage advice: keep dry (15-20°C)
