Damco Almond Bitterkoek Koekjesspijs 10 kg
A delicious almond-quality biscuit paste from Damco, suitable for making macaroons.
Please note: this item comes with a relatively short shelf life. This is due to the freshness of the product.
Use advice:
Flatten the sponge with fresh egg white and pipe onto baking trays lined with silicone paper. Flatten the macaroons before baking.
Bake the macaroons for approx. 18 minutes (oven temperature approx.180°C).
Tips: It is best to store the sponge cake in a cool place. It is best to process an open box as soon as possible.
The baked product is excellent for freezing. This saves labour and also means you always have fresh products of the best quality in stock.
Recipe:
2,000 g almond macaroons
190 g egg white
Procedure:
Tighten the sponge with the egg white and pipe caps. Then place the biscuits on greased and dusted baking trays or on silicone paper. Leave the piped biscuits on the baking tray for ± 30 minutes. Before baking, flatten lightly with a well-damped tea towel (almost wet, but some water may drip off).
Oven temperature* fixed: approx. 185°C

Baking time: approx. 11-18 minutes
