    Damco Almond Bitterkoek Cookie Filling 10 kg

    A delicious almond-quality cookie paste from Damco, suitable for making bitterkoek.

    Please note: this item has a relatively short shelf life. This is due to the freshness of the product.

    Recommended use:
    Mix the paste with fresh egg white and pipe onto baking trays lined with silicone paper. Moisten the bitterkoekjes before baking.
    Bake the bitterkoekjes for approx. 18 minutes (oven temperature approx. 180°C).

    Tips: It is best to store the filling in a cool place. Once opened, use the box as soon as possible.
    The baked product is excellent for freezing. This saves labour and also means you always have fresh products of the best quality in stock.

    Recipe:
    2,000 g almond macaroons
    190 g egg white

    Method:
    Mix the almond paste with the egg white and pipe into small mounds. Then place the biscuits on greased and floured baking trays or on silicone paper. Leave the piped biscuits to rest on the baking tray for approx. 30 minutes. Before baking, flatten them slightly with a well-moistened tea towel (almost wet, but a little water may drip off).

    Oven temperature* fixed: approx. 185°C
    Oven temperature* top: approx. 200°C
    bottom: approx. 165°C
    Baking time: approx. 11-18 minutes
    * Baking times vary depending on the type of oven.


    Storage advice: store in a dry place (15-20°C)
