Chocolate Decoration Tool Stainless Steel Petals Small Sturdy stainless steel tool to make the most beautiful chocolate petals. This decoration tool was developed by top pastry chef/chocolatier Frank Haasnoot.
Procedure: Use a piece of baking paper or plastic (e.g. acetate foil or guitar sheets), stick it to the workbench using alcohol or oil. Dip the stainless steel tool in tempered chocolate, tap the tool a little to remove some of the chocolate. Turn the tool over and press the chocolate onto the baking sheet or plastic. Lift the tool carefully and slowly. Leave the made decoration for a few hours (at about 20 C) before removing the decoration from the baking paper/plastic.
